Marmarabirlik Kuru Sele are a high-quality specialty among black olives. "Kuru Sele" (dry salting method) describes a traditional preservation method in which the olives are stored in salt and agitated by shaking until they lose their bitterness and some of their moisture. The result is deep black, slightly wrinkled olives with an intense, rich, and less salty flavor than olives preserved in brine.
